Globe Artichokes and Onions
- 4 globe artichokes, leaf tips trimmed, quartered through stem and choke removed
- 8 small white onions, peeled
- Juice of 2 lemons, lemon shells reserved
- 2 cups chicken broth
- 1/2 cup olive oil
- 1 tablespoon kosher salt
- 4 fresh dill sprigs
- 1/4 cup chopped fresh mint or dill
- Arrange artichokes, cut side down, i a 12"x71/2"x2" dish,
with the fat stem ends toward the outside of the dish.
Tuck onions and lemon shells among artichokes.
Add broth, oil, salt, and dill sprigs.
Cover tightly with microwave plastic wrap.
Cook in microwave oven at 100% for 12 minutes.
- Remove from oven. Uncover and turn artichokes over.
Re-cover tightly and cook for 8 minutes more.
- Remove from oven. Let stand, covered, until cool.
Just before serving, stir in 1/4 cup of the lemon juice,
salt fo taste, and sprinkle with mint or dill.
